How long does a side of bacon keep?

I have just finished two slabs of streaky bacon, each about 2kg. Cured then smoked. At this stage, I normally go back to the butcher who sold me the pork bellies, and they very kindly slice them for me. Then I freeze the bacon in packs.

However, they're on holiday till next Thursday.

It's been about ten days since I finished the curing - since then they've been kept in the fridge, apart from the day of smoking. Will they keep another 10 days before freezing?

It should be fine wrapped up in grease proof paper; the flavor will mature and be even better. You can even give them another cold smoke weather permitting.
