pork back fat storage

pork back fat storage

How long can pork back fat be stored in the frig? What is the proper way to store it? It is not expensive so I have been tossing the extra but it would be nice to keep it on hand.

I vacuum pack it and store it in the freezer. Should be good for a year that way.

Hint: Cut the fat such that it will fit in your grinder, then portion in a standard quantity, so all you have to do is pull out exactly what you need and you can then grind frozen, or let set out a bit depending on your grinders power.
