Dried Milk In Sausage

I just made a batch of pork sausage. The recipe called for 4 tablespoons of dried milk to add to the sausage mixture. The recipe called it a binding agent and will make the sausage more moist when cooking. Anyone ever heard of this?

Hi Deep,

From what I know which still is too little, dried milk is more commonly used in hotdog type sausages or those in which the ingredients are emulsified, however I see no harm in adding powdered milk to fresh sausages as it is quite sterile and cannot really do any harm. Perhaps you could post the recipe here for us to look at?
