Red Wine Instead of Ice Water

Today I am experimenting with a new sausage. The recipe calls for the use of red wine instead of ice water when mixing the ground pork. Has anyone ever substituded wine instead of water in their sausage.

I will report back on the taste when I cook them.

Yes, i've used wine - it tastes nice, but you have to be careful not to overpower with wine taste by using too much.

Like the man says, it can be very nice, but either use a fairly light wine or use a mixture of wine aand water. I made some once and they ended up quite bitter, too much tannin in the wine. And remember the rule about not using wine to cook with that you wouldn't drink.

I made a Boerewors recipe which called for vinegar - I used wine vinegar instead and it was very pleasant indeed.
