I have found a butcher! Someone who doesn't stare at me slack-jawed when I ask about whole shoulders! Someone who doesn't blink when I ask about fresh back fat! Someone who can actually get me fresh pork bellies and fresh ham. Someone who can even get me kid (in season). It has taken four years to find a new supplier! I'm stunned! Can you tell I'm doing the happy dance? :D

It seems to me that a good butcher is worth his weight in gold, so you must encourage your friends to use your supplier, thus hopefully, ensure he can afford to keep going.

Eureka too,

I have just discovered that although there are no butchers in my town there is a butchery that supplies Market Stalls in the Covered Market in the centre of Oxford and they do sell to the public "out the back door". All openly and above board, but I didn't have any cash on me and I suspect they don't do debit cards :lol:
