Today i made Chorizo Lomo and sobressada

Today i test first time a recipe for chorizo lomo , sobressada is not new on me

chorizo lomo is no more thant pork loin with he same recipe of spanish chorizo but this time the meat is not trimmed on the machine, you cut in small cuts and then stuffed

the small one is chorizo lomo, in spain this chorizo is the best chorizo you can made for pork, i nver taste so i let you know
