Vegetable Roll from Ulster--Who has a recipe?

A breakfast sausage made the size of a salami and then sliced and fried(what else but fried in Ulster?)

I've been scouring the Internet and the only mention of Vegetable Roll I have found is in the commercial offerings of a butcher shop in Brooklyn, New York. The guy won't give me his recipe, can you credit that?

vegetable roll - a peculiar local delicacy made up of sausage meat mixed with scallions (spring onions) which has prompted many a vegetarian tourists' bowel movement
