Hello,

Should I cure hams from fresh meat and freeze the cured product?

OR

Freeze fresh meat and defrost and cure when I am ready to eat it?

Which method provides the best product? Does it depend upon the curing method?

I'd not condemn either; it's somewhat dependent on what's economical and convenient for you?

It is definitely more convenient for me me to freeze and cure later. Some would frown upon using previously frozen meat for certain preparations. I'm thinking salami and dry cured whole muscles.
