Storing Pauline's Ham

Hey Phil, Still making you're (Pauline's??) ham and gave a few out as Christmas presents this year. I vac packed and gave it family who then asked how long it would keep in the fridge uncooked. I said a couple of weeks but as mine's never around that long I wasn't sure. I know commercial hams keep longer than that but is it due to other preservatives/additives or is the Nitrite in cure #1 enough. Looking at the ingredients in commercials it typically just says nitrites.
By the way everyone raves about the flavour of the Ham (and corned Beef).

I'm glad you like it Steve. I've never tested fridge storage and only have a domestic vac-packer so don't like to push it. I slice, vac-pac, then freeze mine.
