I am considering using Oddleys 2 and 1 equilibrium cure.Is there any reason why I cant use a bag to hold the cure rather than a tight fitting container.

As long as it's not a paper bag I can't see a problem.

Thanks Phil Iwas just a little concerned that the meat in the bottom of the bag wouldnt have a very good contact with the brine so I thought that I would place the skin at the bottom.Think Ill try using wate first to see how it goes.

Well you´re supposed to overhaul (move the meat around) every day or so.
