RABBIT storing help NE1?

Postby Sam Newman » Fri Nov 26, 2010 1:29 am

Hi. Does anyone know a safe way to store rabbit meat without freezing it? Can I brine it or store a cooked stew :?: I understand it is more difficult than most meats?
You can lead a dog to water, but you can't make him a horse.

Cook it and store it under fat - maybe from ducks - as in French rillettes or confit?
