I am a newbie that is looking to learn brine curing of lamb. I would like to make sausage; smoked leg of lamb, proscueto and anything else good to eat from lamb. My family raises St Croix Hair sheep and I want to learn how to preserve it without chemical additives. I'm real sensitive to nitrates and nitrites.
