There's a whole world of vegetables deep fried in gram flour batter waiting for you in Indian food. Onion bhajis are the least of it. I spent six months travelling in India (before family) and I'm one of the few that put weight on. I love Indian food. (Actually, I just love food :D )

Let us know how you get on with your course.

I've lived in all sorts of far flung places, loved all the grub, from deepest Africa to South America, Arabia etc. It helps if you'll try anything, which I will, and if I like it I want to cook it. I've cooked in some strange places I can tell you!

I now teach what I've learned, and continue to learn, so you can imagine how much I enjoy my work.

Thanks for the Mozz / Paneer recipes.

(I only recently tried a decent paneer curry & fell head over heels for it, as meat substitute it works like a dream, so looking forward to making both).

Whilst I know Mozzarella smokes well i'm curious as to whether it's the done thing with paneer?

I've never seen it, but can't see why it wouldn't. Like Halloumi, it has the advantage of not melting when cooked, so would open up all sorts of possibilities.

After years of too much choice on the menu (& not knowing what the heck this paneer was) I stumbled across a reduced waitrose paneer curry or 2 & have been hooked since!

well worth the effort with a good curry & move on from there.
