I am in at the deep end a bit - I have never cured hams before, but I will have four large tunnel boned hams from my Oxford Sandy & Black sows arriving next week. I wanted to try a couple of different dry cures with them - can anyone recommend a suitable mix or mixes? Also, will I need fly mesh for hanging? and if so, where can I get this from??
