Thought I would share my recent results in fresh sausage making. A spicy traditional thai sausage that is first smoked, then chilled, then grilled over charcoal.

I can post the recipe if anyone is interested. Modified from the book "Thai Food" by David Thompson

This recipe looks great Matt. Quick question, I've found that using fresh ingredients can sometimes be hit or miss and they don't hold very well, even when frozen. I'm sure these didn't last very long but did you have any issues with flavor degradation from the fresh veg?
