Size of holes of mincer grill

Good morning

We are going to make sausages and we are going to pass the meat through a machine mincer which has holes of 10 mm and after that we are going to use the hand mincer without the cutting blade to make the sausages but the grill on the mincer only has 9 mm holes. Are we correct in doing this?

If all you intend to do with the hand mincer is stuffing the casing, then you don't want the mincer plate in there. A spacer plate or kidney plate would be a better choice to use without the knife in place. If you do not have a spacer for your hand mincer, then you should use the plate and knife, because the mince will be slightly larger than the holes in the 9mm plate, and the knife will help get the meat through the 9mm plate. Just my opinion, of course.
