How long can I wait before stuffing the casings

Hi,

I am about to start making some air dried sausages but work and life in general means that I probably won't have the time to do the whole process in one go...So, How long can I leave between the moment the meat prepared (ground, seasoned, cure #2 added) and the moment I stuff the casings? is it better if I vacuum pack the mix? I am probably looking at a couple of days between both part of this project.

There are those that mix and refrigerate for up to a couple of days (I just did), it can help in building a good bind before being cased, so in answer to your question Yes you can fit it into your schedule :)
