Help!!!!! Curing Coppa

I have 2 Coppas in a pan that I packed with salt 5 days ago. Was going to let them set fort 9 days then turn and redress with salt. I checked on them last night and found them sitting in salt solution.

Should I remove them re-salt and set them on a rack or just let them sit in the liquid.

Thanks for the help.

That all depends on the % of salt used.
I prefer to EQ cure now in a vacuum bag with a part vacuum. No mess and with EQ ,no over salting!! and the curing time is no longer critical.

Yes as in Kosher salt.

In that case, I'd probably redress it and try to lift it above any liquid.

That said, I don't cure by this method so this is only my 'gut feeling' as to what I'd do.

I pulled the muscles out today, both are very firm so I've decided that they have cured enough. I have reviewed 8 to 10 recipes and the cure time is all over the map from 3 days to 25 days. That being said I've spiced and stuffed into Beef Bung, warped in net and string and they are now drying for 24 hours before I put them into the cold box to finish.

Thanks for the advice it is always welcomed and weighted.

In most curing, it's the time to equalise that's the important bit. With coppa that shouldn't be an issue.

The Coppas came out great one is completely gone and the second is down to half in a vac sealed bag in the frig.

Sorry it has taken me so long to get back been busy with life. I'm on vacation sitting in a condo looking out at the ocean and taking the time to go back to the forums that I lurk about on.

I'm planning on making more but will have to wait till late fall or winter due to temps in my location.
