Howdy folks-
I have dried my sausages to the point I like them and I'm wondering how you all store them? I heard that vac-pack or saran wrap works but may screw up the nice white mold.

I vac-pack my dried sausage and it works well to equalize the moisture and reduce or eliminate case hardening. I usually wash and remove the netting or string before storage but you should have no problem with the mold if you vac-pack. I remove the casing before slicing and serving. I don't eat mold, cheese or sausage....

I should have stated that I don't eat mold on cheese or sausage.Of course I eat cheese and sausage..... :lol:
