Cooking the fat before mixing with meat

Hello all,

I have about 10 pounds of fat, but there is a bit of meat in it as well. In order for me to get exact weight of how much fat I'm putting into the meat, I thought about cooking the fat down to a grease and then removing the meat, and then allow the grease to cool in the refrigerator. Could I then use that as my fat? Or does cooking it change it chemically to be something else entirely?

Welcome to the forum. :D Cooking does change the fat by causing it to lose its structure. A rough estimate or going through it with careful trimming usually works for me. You could post a picture and we'll take guesses for you.

It doesn't have to be that accurate, just judge it by eye.

As NCPaul says, cooking it will change it - your sausage will be horrible.
