Fresh Turkey Sausage

I'm making fresh turkey sausage, using a bit of pork fat to bump up the fat content of the nice lean turkey meat. My question is: is it safe to thaw a frozen turkey, then re-freeze the meat once it's been made into sausage? It's difficult to get fresh turkey where I am at this time of year. Appreciate any input... or maybe a good recipe or two for turkey sausage! Thanks!

I can see no issue with this assuming it's defrosted at fridge temperature and kept at those temps throughout processing.
