Cheese 3

Had another go, this time I got a cheese mould. :roll:


The new and improved Hobby Stuffer/Cheese Press :wink: :wink:

The mark 2 was a bit wet but tasted nice, so hopefully I've squeezed a bit more whey out of this one. :D

I also made Ricotta from the whey sorry no pics it went straight into some spinach and ricotta pasties.

If this works I'm going to have another go at Stilton :idea:

I used the Stilton recipe but without the Stilton (half the quantity). I added 1/2 pint of double cream to it.

So I'm hoping that I'll get White Stilton/Cheshire type cheese.

I meant of the use of the hobby stuffer as a cheese press :D

Sorry :oops:

I started of by balancing a 10BL weight ontop of the follower, this slipped off 2 or 3 times so I though what about using the hobby stuffer.

The prob was that the mould was just 2 wide to sit on the base of the stuffer.

So I built the base with lids of plastic tubs.

And topped it of with the metal top of my scales. This gave a firm base for the mould to sit on, so then all I had to do was turn the screw.

Thanks Tim, people have expressed concerns over the plastic gears when stuffing, did/do you have any worries when pressing? Which mould did you go for? Sorry for all the questions I haven't done a properly pressed cheese yet .

So far I had no probs with the plastic gears; I applied pressure slowly over 3 days turning the cheese 2 to 3 times each day.

I removed the air release piston from the plunger to give an even pressure across the top of the follower.

I used the M3 115x115x130 with M5 Follower from Moorlands

This is not a large mould it's just slightly smaller in circumference than the plunger on the Hobby Stuffer.
