Your just in unknown territory, I am a cheese idiot. Love the stuff, the stinkier , the better. While I would love to go down this road, there is nothing promoting the venture.

I would love to see some hand holding for a few recipes, then perhaps I could tailor for personal taste. I have no supplies or sources so go easy on me.

Dave I just read that... man that's pretty complex, time and labour consuming.

Perhap, this summer I will revisit this when I have more time. This weekend I have 9 butts to smoke along with 8 loins. I seem to have develpoed a following that has become very demanding...

I wanna get a smoker but don't know where to start. Give me some food for thought will ya? I need something else to learn now that salami season is coming to a close.
