I find this great with pork sausages. But then I like marmalade with them as well.

Orange Marinade

2 oz apple cider vinegar
2 tbsp soy sauce
1 tsp garlic, minced
2 oz undiluted orange juice concentrate (not squash)
2 tbsp lemon juice

Whisk together all ingredients. Pour over sausages and leave for at least 1 hour before cooking.

Spice Rub for Pork

1 tbsp fennel seeds, toasted
1 tbsp cumin seeds, toasted
1 tbsp coriander seeds, toasted
3/4 tsp ground cinnamon
1 1/2 tsp dry mustard
1 1/2 tsp brown sugar

Toast seeds in small frying pan over medium heat, shaking pan occasionally to prevent burning, until fine wisps of smoke appear. Cool to room temperature.

Combine cooled seeds with remaining ingredients, and grind mixture to powder in spice grinder/mortar and pestle.

Rub mixture over oiled pork sausages/steaks before grilling.

Be sure to turn often to stop the sugar from burning.

All Purpose Spice Rub

6 oz paprika
2 oz ground black pepper
1 oz salt
2 oz granulated sugar
2 tbsp chilli powder
2 tbsp garlic powder
2 tbsp onion powder
2 tsp cayenne

Mix the spices thoroughly in a bowl. Store in sealed jar in a cool, dark place.

Chinese 5 Spice Powder

1 tsp ground pepper
1 tsp ground star anise
1 1/4 tsp ground fennel seeds
1/2 tsp ground cloves
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground white pepper

Combine all ingredients in small airtight container.
Store in a cool, dry place.

Steak Seasoning

3 tbsp coarse salt
3 tbsp paprika
2 tbsp ground black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried thyme

Mix all ingredients together well. Sprinkle evenly over steak and grill or cook as desired.

Chicken Marinade

2 oz vegetable oil
6 tbsp lemon juice
2 tbsp minced onion
dash salt and pepper
1/4 tsp paprika

1 tbsp chopped fresh parsley, OR 1 tsp dried parsley
Mix all ingredients. Cover and refrigerate for 30 minutes before using. For grilled chicken, pour marinade over 2 to 3 pounds of chicken pieces and refrigerate for 4 hours or more.

Do not re-use marinade

There are many different recipes fpr Ranch dressing, this is my version.

Ranch Dressing

1 jar (8 oz) mayonnaise
� pint semi skimmed milk
2 tbsp onion tops, finely chopped OR 2 tbsp chives, chopped
1/4 tsp onion powder
2 tsp minced parsley
1/4 tsp garlic powder OR 1/2 to 1 garlic clove, finely minced
1/4 tsp paprika
1/8 tsp cayenne pepper
1/4 tsp salt
1/4 tsp black pepper

Combine all ingredients in a small bowl and refrigerate until used.

3 oz soy sauce
2 tsp minced fresh ginger
3 tbsp honey
2 tbsp sherry

Whisk together all ingredients. Set aside until needed.

Steak Marinade

6 oz pineapple juice
2 oz packed brown sugar
3 floz cider vinegar
1 tbsp soy sauce
6 oz ketchup
1 tsp ground ginger
1 1/2 tsp honey or liquid smoke

Combine all ingredients. Add with meat to a large shallow dish or to a large zip-lock bag. Refrigerate over night. Remove meat and cook. If you wish to use marinade as a baste; boil it for 10 minutes in sauce pan or microwave first.

Heres a marinade/glaze for a bacon joint.

2 tbsp honey
1 tbsp lime juice
2 tbsp lemon juice
1 tbsp Dijon mustard
2 tbsp wholegrain mustard
6 cloves, crushed or 1/2 tsp ground.

Mix all the ingredients together and marinde thw joint with half of the mix for at least 3 hours. Cook as normal basting with the mix now and then.

Hi all,
Not the right time of year but me personaly I BBQ all year round regardless of the weather, so after reading the various posts for marinades, I thought that I would contribute with my own version.
Chicken marinade
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp ground black pepper
1/2 tsp cayenne pepper
2 cloves garlic crushed with salt
1/2 tsp garam masala
1 tbl spoon of tomato purée
Lemon juice of one lemon squeezed
5 tbl spoons of Olive oil
mix thoroughly
Put the mix In a zip bag and add 4 chicken breasts cubed, close and seal tight then thoroughly mix the chicken and marinade and leave in the fridge for 24 hours, Bring out of the fridge one hour before grilling to reach room temp then grill on BBQ using skewers basting with the marinade you have left in the bag as it grills.
Now eat and enjoy and thank Kevin for giving you the best tasting chicken you're ever going to eat, trust me its that good.
