Spicy chicken wings

Here is one of my favourites, and I make these almost every week.


A dozen chicken wings with ends cut off. I then cut them in half again but this is not necessary, I just do it.

4 tablespoons of flour
4 tablespoons of cajun spice mix (this is the one I came up with and probably one of millions available)

Blend the flour and spice mix together and throw in a few washed and damp wings at a time; continue until all the wings are coated as this will leave a nice crispy covering on the wings when cooked.
Cook the wings in an oven at 180d or 400f until done.
About 35-40 minutes depending on your oven

Cajun spice mix
3 tablespoons Salt
1 tablespoon black pepper, coarsely ground
1 tablespoon garlic powder
1 tablespoon sugar
1 tablespoons onion powder
1 tablespoon oregano, dried
1 tablespoon cayenne pepper (or as hot as you wish)
1 tablespoon white pepper
1 tablespoon thyme, dried
1 teaspoon dried mustard
1 teaspoon cumin powder
1 tablespoon smoked paprika

Thought i'd just say i've done these a number of times with drum sticks and thighs and there great. i've since made a slight alteratation by adding 1tsp of celery salt to the spice mix and substituted 1tbsp of flour for cornflour. The celery salt is just my preference but I find the addition of cornflour gives a crispier coating. I also like the dip the chicken in beaten egg instead of water as it seems to hold more coating

I tried this recipe over the weekend and it is awesome! My whole family enjoyed these chicken wings!
