Hi,
I am looking for a sausage to make that is fast cured/smoked. I don't have the environment/humidity cabinet suitable for curing sausages properly (yet).

I am hoping to make something like a cured italian sausage. Is this possible? I have seen a fast cured pepperoni recipe, but seeking alternatives.

Not my area of expertise but what do you mean by quick cure and why. Also are we talking of cold or hot smoke.
Also Italian style? A recipe would help.
Sorry to appear negative but more info is helpful to those who know
