My First Canadian Bacons

Postby Dingo » Sun Jul 28, 2013 2:53 pm

Howy all,
Found a forgotton pork loin in the deep freeze the other day and decided to make some Canadian Bacons. The recipes came from Len Poli;

Pea Meal Bacon http://lpoli.50webs.com/index_files/Pea%20Meal%20Bacon.pdf
Canadian Bacon http://lpoli.50webs.com/index_files/Bacon-Canadian.pdf

The Loin (smaller for the pea meal, larger for the canadian)

Making the brine (this one is for the canadian)

Bagged up and heading to the fridge

I forgot to take photo's of the pea meal bacon, however here is the canadian going into the smoker ( along with a fattie)

And 5 hours later...done;

Freshly smoked hot bacon is awesome. Although I think it has a more ham like flavor.

Sliced;

And a bacon, egg & Cheese burger I made with it that night;

My preference is actually for the Pea Meal Bacon. It is awesome on a BLT with mayo. It's less hassle to make and seems more versatile.
Thanks for reading....

It's a lot different to the way we make bacon over here. But, it looks like it was good to eat?
