Mortadella

Howdy Y'all,
My wife is addicted to bologna, or devon as we used to all it in Australia. So rather than continually buying the store stuff that is no doubt full of chicken lip and duck anus :shock: I decided to make a mortadella. So far the only emulsified sausage i've made is hot dogs. I do have a nice home made mayo recipe, so i'm comfortable with the concept/process.
I used Len Poli's recipe, with a fibrous casing.

At this point i realized I had forgotten to put in the hand diced back fat :oops: Oh well... it still got the wifes stamp of approval

That looks good. :D :D :D

Can you report back with how it is after it's been frozen and defrosted please. I found that the Mortadella made with the recipe I used went a bit rubbery.

Thanks Guys....it tastes pretty good. I've never fried luncheon meet before..wow..a whole different avenue for them.

Nice Job! It looks very tasty! I have been wanting to try a Mortadella for a long time. It is one of my favorites.

I don't recall if I posted here, but last year, I made a mortadella and mistakenly used turmeric thinking it was mace. This was a BUTT ugly mortadella. It had a sort of yellow/orange tint and you could taste the turmeric. I ate it anyway. It was pretty good cubed and tossed in with scrambled eggs. I would encourage all to try it. I've also boiled it, but prefer oven baking it.
