Noisette - Hazelnut Salami

Made this one the other day; I cold smoked the hazlenuts after roasting them. :D

As you would expect...it has a nice nutty flavour with the red wine nicely in the background. Perhaps a tad to salty, but otherwise very nice.

Hey DanMcg,...not so much really. The hazelnuts by themselves had a very smoky flavor, but it seems to get lost in the salami. Although, i cold smoked 3 out of the 6 salamis I made, just haven't tried one of the smoked ones yet. I think a light smoke flavor would really enhance this salami. :D

Awright...i tried one of the smoked salamis..mmmmmmmm very good!....The smoke flavor is there. When! i do it again i will go for a longer cold smoke. I think more like the Hungarian salami....3-4 cold smoke sessions would make this salami awesome.
My french cousin doubts it...typical frenchies :D He offered to mail me a "real" version! I think I should take him up on the offer...however I doubt that the US immigration dept would allow it. (What with raw meat crossing borders etc) Please tell me if i'm wrong! I'd love a real version for comparison :drool:

On different note -- it is/was my understanding that if it is for personal use verses re-sale then alright

Thing might/could have changed over the last little while -- I will also be looking into this

Thanks Brican...let me know what you figure out. I have family all over Europe..it'd be nice to get some goodies.
