Canadian sources for sausage fermentation cultures

Hi,
My name is Ken and I am new to this forum.

I would like to know if anyone can direct me to Canadian sources for sausage fermentation cultures. It would be great to know if there are any in western Canada. I am in Alberta.

I think your most local option is Stuffers Supply in BC. There are other choices in Eastern Canada but with higher shipping I'd assume. Welcome to the forum. :D

I did check Stuffers but all I could see was Fermento. I am open to eastern Canada sources and American sources if they ship to Canada.

The cultures are listed as Mondostart. You could also try try Halford in Edmonton.

I saw the Mondostart but I mistakenly thought it was the starter for the casing white mold.

I know of several out in my neck of the woods however, my preferred cultures are Chr Hansen cultures (bactoferm T-SPX or F-LC). Unfortunately I can not find these in Canada and usually order them from Butcher-Packer here http://www.butcher-packer.com/index.php ... &cPath=207. The few cultures I have tried from other sources just never seemed to give me the flavour profile that I like so I now exclusively use those ones. They also carry mould cultures if you are looking for that as well along with other sausage supplies. Even with the shipping cost they are quick and usually reasonably priced.
