Hillbilly bacon

Hello there!Today I Finished smoking and packaging up my Hillbilly bacon, it turned out very well which is why I wanted to share the recipe with you.

My 5 year old daughter saw those pictures and asked if we could have eggs and bacon for lunch. No higher seal of approval exists :D

Thank you Wohoki! There is some frying up for breakfast right now,we are having farm eggs and homemade sourdough toast to go along with it.With how easy it is to make bacon I dont think that I will be buying bacon any longer.Best wishes!

ps-I must admit my husband is the one making the breakfast today,he did a nice job.

Well I decided to give HB bacon a try. It was really good, I was quite suprised. I cut mine a bit differently then Georgie. I took the butt roast and split it down the middle horizontally. As I came to the bone I carved around it and the pieces that came out looked alot like a piece of belly. Even after it was smoked my wife was convinced it was a piece of belly.

I sliced it up on the slicer and it frys almost the same as regular bacon. It has a little less fat and has more grissel. I'll learn to trim it up a bit better.

So I have to say give it a try. Its cheaper and tastes just as good as belly bacon.
