minimum salt in salami
Posted: Wed Jan 17, 2007 2:44 amLooking for some feedback if you guys think i could safely make dry salami with only 1 percent salt green weight concentration and using praq #1 at 150ppm and salt petre at 500ppm . Any feedback would be appriciated.
