Bacon Flavored Sausage

Has anyone ever heard of a bacon flavored polish sausage? The reason I am asking is because there is a meat locker here in Nebraska (U.S.) that makes a wonderful sausage that they call a Polish Sausage or "red link". It doesn't taste like any Polish sausage I have ever had before. It is a lightly spicy sausage that seems to have a very mild maple taste. It almost tastes like a maple cured bacon. It looks like a cured sausage and is fully cooked when purchased. It actually gets more red colored the longer it cooks. It isn't smoked but I believe it may be cured in the smoker (with no smoke) because it has a very, very slight smoked taste. It is stuffed in 33-36mm hog casings I believe.


Anyway, I was just wondering if anyone could help me with a recipe because this locker is over 5 hours from me and I would really love to be able to make it myself. This locker is in a area that has a heavy German/Polish immigrant population if that is any help. Thanks in advance for any help.
