Hi dear folks!
Just wanted to post my first try at cured salami - specifically Salame di Brianza after Jason's recipe over at Cured Meats.
Again, thanks, Jason for all the personal help and inspiration your blog is to me!!
The thing was SUBLIME - and it's gone already!

Nice posting on your blog and a great looking salame. I'm glad you started you blog post out with some tips about clean and cold equipment.
