Sweet Ham

Postby Fatman » Thu Sep 23, 2004 12:01 pm

Hi Folk's

I have just done the following Ham:-

A Ham weighing appx 8.5lbs dry cured for one week using a sweet cure mix from Lucas. Then boiled in Coca Cola & Lemonade , once 3 parts boiled ( including simmering) I then removed the rind, I then diamond cut the fat , placing cloves in each diamond. I then gave the Ham a further 30 mins in the oven at 190 degrees, removed the ham once more and poured Maple Syrup over the top and replaced to the oven for a further 15 mins.

Result was first class!!!!!

Did you use the easicure sweet or traditional? I have started selling both on the website along with my organic cure. Ihaven't tried them for ham yet only bacon.

Franco

I used the sweet cure.

For interest I today repeated the same exercise and substituted the coca cola for Guiness, the results were poor.
