pick some tomatoes, wash and quarter then run through a tomato strainer

pick and clean some veggies, everything is from my garden except the celery :)

Start to chop them up

no more tears ;D

on to the peppers

carrots

done ;D ;D and I still have all my fingers

add some oil to a big pot and saute the veggies until onions are soft

remember that sauce we made , add it now

add all other ingredients except for tomato paste and cook for 6 hrs

Add tomato paste and cook for another 2 hrs

Ladle into sterile jars, and seal lids

Spaghetti Sauce


3 large cans 28 oz. of tomatoes or fresh equivalent
2 onions chopped
1 pepper chopped
2 stalks celery chopped
2 carrots finely chopped
2 cloves of garlic chopped
2 cans 6.5 oz. Tomato paste
2 tsp. Sugar
2 tsp. Salt
2 bay leaves
1 tsp. Oregano
1 tsp. Basil
1/8 tsp. Cinnamon
� tsp. Crushed Chili pepper
3 oxo cubes
saut� onions, garlic, pepper, celery, and carrots until onions are clear. Add tomatoes and spices , simmer 6-8 hr.

Here's my version of this sauce.

Spaghetti Sauce

1 clove garlic, minced OR 1 tbsp powdered garlic
1 med onion, minced
1/2 green pepper, seeded, minced
4 oz fresh OR tinned mushrooms, sliced
12 oz fresh tomatoes OR large tin chopped tomatoes
3 oz tomato puree/paste
1 tsp sugar
1 beef stock cube (oxo)
2 tsp fresh basil, minced OR 1 tsp dried basil
2 tsp fresh oregano, minced OR 1 tsp dried oregano
1/4 tsp salt

Mix garlic, onion, pepper, and mushrooms and saut� in a large saucepan, stirring often, until vegetables are soft.
Stir in remaining ingredients and simmer until hot throughout

Goes well with 1 lb beef minced and lightly browned for bolognese.

2 cloves garlic
handful fresh continental parsley
4 tablespoons Extra virgin olive oil
I bay leaf
4 anchovies
I can(fresh if you have them) of San Marzano tomatoes(Romas or Plum if you cant get the real ones)
Saute ingredients
add tomatoes
simmer
add fresh basil at the end.

If you havent got anchovies I use thai fish sauce.
