Hilltop Beans

Last year I was invited to cook at the Jack Daniels BBQ Championships with a friend of mine who qualified for the invitational. The comp is held in Lynchburg Tenn at the Jack Daniels Distillery. The night before the comp they have a dinner for the teams at the top of the hill where the distillery is consisting of Southern Foods and plenty of Jack�a great time was had by all. This was one of the side dishes and is southern comfort food at its� finest. Very simple to make with few ingredients. Hope you enjoy

1 - Meaty Ham Bone (Smoked Ham Hocks or Smoked Turkey Legs can be substituted)
1 - 16oz bag of Great Northern Beans
1 - Large Onion medium dice (white or yellow)
5 - Cloves of minced garlic
Chicken Stock
Salt and Pepper to taste
Water

Rinse the beans and pick out any foreign material

Add all of the ingredients above and more water if necessary to cover the ingredients. Bring to a boil, cover and reduce heat and let simmer for 3-4 hours.
If using a crock pot cook on low all day.

I don�t soak the beans at all�when they are done cooking the bean juice is almost like a gravy.

Serve with Cornbread

They look like a slightly larger version of a haricot bean.

Navy beans are very close.
I'm an official Jack Daniel's taster. I'll be in Linchburg next week.

ps. its a dry county they can't serve any samples at the still.
If you are in the area take their distillry tour, the tour guides are a hoot.

Ask for David....hes the best guide
and the dry county thing..thats what makes the party on the Hill so special..I'm still trying to get my mind wrapped around a dry county...I've been there but still don't believe it :lol:

SOLD, I'm going to give them a try this week.

Unfortunately it will have to get behind my fire brewed chili recipe. I have to practice this recipe as I was just invited to do a chili challenge as a top three contestant, that may or may not end up on the food network.

Not much details right now, just that it will be the end of next month and that the "media" will be present.

As for the white beans, across the pond you can find cassoulet beans and use them.

Big dog, don't git me talkin' smack about chili now..... 8)
