Greek Summer Salad

Greek Summer Salad

Salad:
200 - 250g feta cheese
1 Onion (medium)
1/2 Cucumber
6-8 Smallish Tomatoes
200g Tin of Tuna (in brine)
100g Pitted Black Olives (I prefer to coarsley chop them but that's optional)

Dressing:
4 Tb Olive Oil
2 Tb White wine vinegar
1 Tsp Caster Sugar
1/2 Tsp English Mustard
1/2 Tsp salt
2 garlic Cloves Crushed
Freshly ground black pepper
1 Tb Freshly Chopped Basil leaves

Dice the Feta cheese into small pieces, slice onion into rings, quarter the cucumber and slice THICKLY, quarter tomatoes, coarsley flake the tuna, put all these into a bowl.

Mix all the dressing ingredients into a jar with a secure top, shake until well mixed/emulsified.

Pour dressing over the salad and toss together, place in fridge until ready to serve, then sprinkle with the basil leaves.

This salad goes extremely well with BBQ food in the garden :)

Try not putting the tomatoes in the fridge they lose their flavour.

Nice recipe - I bet it would also be nice with fresh oregano or marjoram in the dressing.

Oh, that is so good! I've been eating it twice a week in the summertime for 30 years. Good to see that the recipe as it reads has undergone no changes...
