Wow you guys have been so busy! I have only just managed to source a suitable dish a couple of days before returning to Africa! So my efforts will have to wait until the New Year! Keep up the experiments this is a fascinating thread!

I made another loaf today but I made 1 change,I used 1 cup wholewheat flour and 2 cups plain white flour instead of 3 cups plain white flour. The outcome was supurb! Not crumpet like at all!

Wow! Has Patty started a world record thread her, based on length? Anecdotally, I say it is world record based on popularity of results! I just got an order for "no knead bread with rosemary essence" for Thanksgiving dinner :shock:

Cinnamon raisin NYT bread

Forgive me guys,I hope you arent tired of my posts yet? Today I made some more bread! I followed the original recipe but added a tablespoon of vinegar, 2 palmfuls of raisins, and some cinnamon sugar,this is my best bread yet! Give it a try!

The finished result certainly looks good Georgie, but what made you think of adding vinegar?

What does the vinegar do in this case? Did you use self-raising flour - in which case it would have given more air?

Hello! Patricia I used vinegar because I find it makes for a crunchier crust., I use it in my regular white bread making too.If you look in some old time bread recipe's every now and then you see vinegar as an ingredient. Aris I always use plain white flour in bread making,I dont think I have ever purchased self rising flour before?I think the raisins and cinnamon sugar made the dough rise a little better? Hi Patty! I get up at 5:45 am every morning,I start work (crosswalk lady) at 8 am so I get up early to get my house work done before I go out.By the time I got back home at 9 am my bread dough was ready to bake! Best wishes!

Looking at Geogie results of this loaf think I will have to make some to try it out Not over keen on white bread but I will tryout the whole wheat flour Recipe mind you the cinnamon and raisin looks tempting :D :D

Ken boy,I am sure with the 1/3 whole wheat and 2/3 white flour you could make the cinnamon rainsin bread with it and have good results.You will have fun with this bread recipe because it is so easy and the bread is good! Happy bread making!

Well I finally did what Oddley suggested and use my standard bread recipe in the hot pot. Perfection itself, really nice bread and a perfect crust. I used 600g Canadian strong bread flour (thanks jen for the idea!) 400ml water 1tsp yeast, 1 1/2 teaspoon salt. kneaded it for 15 mins in the Kenwood, left it an hour kneaded 5 minutes, left another hour and tipped into the preheated pot at 225 C for 30 minutes, then 5 minutes with the lid off

That does look nice Dave. I shall have a go again this weekend with my usual bread machine recipe, but just put it through the dough programme then tip it into the pot. I'll post a picture.
