Bread Flour

I was in costco over the weekend and picked up a 16 Kg bag of Marriage's Manitoba flour. It has a protein content of 13.7%, cost �10.99 so that would be �1.03p for 1.5Kg. Makes very good bread.

Yes it is very good flour. I've been a Costco member for 11 years now - and they have always stocked this flour (it must be popular!)

no idea of the protein but Tesco and Lidl both �0.48 for strong white

Last week Tesco Stoneground whole wheat �0.48, this week �0.98

All for 1.5Kg.

I used to use Asda because it gave good results and contained Vit C as an improver, bought some recently only to find out that it no longer has the improver.:(
Picked up a bag from Lidl yesterday which has got improver.

Tesco's own brand bread flour has 12.1% protein, the protein is a good indicator of gluten, this being the stuff that stops bread collapsing. The own brand bread flour at 48p, must be a loss leader because they can't produce a bag of flour for that price, or if they can, imagine the cheap grade of flour they use.

I have used the own brand flour, it's not as good as the costco one, or the premium brands. The costco one in my opinion, is better than the premium brands.

I find that time is the best flour/bread improver - plenty of time kneeding, rising and proving makes for great bread. However, as I have said before, improvers certainly produce a speedier result.
I often use a locally ground flour from a watermill near me (granted, the 'bread' wheat is not local). It has no additives other than the compulsory ones and makes great bread. ASDA 48p bread flour also produces perfectly good bread, with or without VitC - I've not bothered checking. I guess Oddley is correct, it's a loss leader. 13.7% protien in the Costco flour certainly sounds good. Sainsbury's 13.4% is 79p for 1.5kg so is a cheaper alternative.

I have a bag of Lidl 12.5% and a Sainsburys 13.4% I think I'll just use the Sainsburys :) I'm tempted to make a trip to this place and buy a 10kg bag for �10.00

Edit: I've just noticed that a farmshop 2 miles away stocks 1.5kg bags so I might try a small one first.

Dave, I used to buy Wessex Mill in Chepstow, it's very good if a little pricey. A trip to Denver mill when you are over this way might be useful. They sell larger quantities and the flour is lovely.

I like the idea of it being locally produced, but I don't mind where it is locally produced, if you get my meaning, so I'll look into the Denver mill next time I'm local to it. I'm tempted to try some of the Wessex Mill French Flour too anyone used it?.

I bought some flour from Maplethorp water mill near Reading, I belive it's the only watermill remaining on the Thames, a couple of moths ago. I makes great pastry and my wife has used it in the bread machine to make great bread ( something I'm still aspiring to )

I've just noticed on Ocado that Waitrose strong white bread flour is 14% protein and is 79p for 1.5kg.

The Waitrose website also lists an Oak Smoked Malted Flour - anyone tried this - either used it or made it?

I'll have a look next time I'm there.

I was rather taken aback today when I popped into our local Budgens to see if they had any bread flour, to see the entire Wessex Mill range on display :shock: I'm not sure who they are expecting to sell it to (other than me, of course).

I picked up some oak smoked today, at �2.85 for 1.5kg I hope it makes good bread :lol:
