Loaf Shaping technique

Watch the last minute where the baker shapes the dough.
I copy the technique and my loafs are much more consistent in proofing and texture.
I figured that there is a few minutes delay between the different stages as the baker has so many to shape, so I add 4-5mins resting after kneading and then another 4-5mins after the first shaping.
