Mold on Pancetta

Happy new year to all.
Could you cast an expert eye on this please

It's my pancetta put into drying cabinet on the 19/12/23.
Within 3/4 days covered with grey furry mold. I pulled it and scrubbed with white vinegar,
It's now as you see it,
Does this look ok?
Now at 22% weight loss

BTW I have a Breseola and a a coppa in the the same cabinet, both have a healthy white mold on them.

I would re-clean it with vinegar. I've never had mold that quickly on pancetta, did you dry cure it?

Yes I dry cured it.
I also innoculated it with mold from a commercial salami.
Is this for the bin?
