Is it possible to make Prosciutto in a tropical country?

I'm from the Philippines and can I make Prosciutto without refrigeration or is the climate too hot (average of 80' F) that I really have to refrigerate it while drying? What are other options so I can make them here in the tropics?

Hi, welcome.

You will need somewhere below 15°C to make air-dried meats.

Hi Lynette,
I am building a small coolroom from "4" insulated panels. This is the only way you can make airdried meats in tropical temperatures and matching humidity.
Robert ( Brican) advised me to use a window airconditioner, this unit would also bring the humidity down.
Good Luck,
Jan.
