Thats the song, for my bacon its 'What a difference 7 days make'
My last batch of bacon I hung with my pancetta for 7days it lost 18% in weight but the flavour was terrific!
I can honestly say its the best i have tasted, its was cured with Oddleys Traditional and gained top marks with my tasting panel.
