I have cured a couple of pieces of belly, one smoked one un-smoked, using Franco's cure. I removed them from the bags on Saturday and left them on a shelf in the fridge to dry out. They seem to be nicely dried out so would guess that now is the time to wrap them up.
What is it best to wrap them in? plastic bag, cling-film, greaseproof paper or what?
How long can this bacon be stored in the fridge?
