I have cured a couple of pieces of belly, one smoked one un-smoked, using Franco's cure. I removed them from the bags on Saturday and left them on a shelf in the fridge to dry out. They seem to be nicely dried out so would guess that now is the time to wrap them up.
What is it best to wrap them in? plastic bag, cling-film, greaseproof paper or what?
How long can this bacon be stored in the fridge?

Hi deb,

I wrap mine in greaseproof paper and it seems to keep fine for about two to three weeks. In theory it should keep for ages (think about the old pre-refrigeration days) but since the advent of the home freezer it seems sensible to freeze any bacon you are not going to eat within three weeks just to be on the safe side

I slice it, then freeze it. You may also try cooking a cured belly whole in the oven - comes out lovely.
