Thought of posting this here since it has to do more with curing than with hot smoking.
Seems like as cold weather settles in (well already for the last 2 months or so in Chicago), I get in the mood of curing, smoking etc.
Here I made a cold smoking contraption using a galvanized trashcan and my Weber that played the role of smoke generator.
The first bacon batch and Gyulai sausage worked like a charm. The only thing was that I needed to babysit the wood chips as they were running out quite fast. Next time I'll use chunks.
