Hi folks - I'm new to the forum. I'm an artist and I am making some new projects which involve different meat related processes. My current project is "Pigs Bladder Football" and I'm looking for a little bit of advice on salting some pigs bladders.

I've read quite a lot online and I've been and collected some bladders from an abbatoir (they are in a secondhand refrigerator I bought right now - I'm wondering though if people have any suggestions?

should I just salt them in a bucket with brine do you think?

or should I look at more sophisticated curing using sodium nitrite (I have ordered some of this through the post)

(Also - if anyone has any memories of playing football with a pigs bladder I'd be delighted to hear from you!)
