No problem my friend, enjoy! Did you have any luck finding those small spring form pans? I got them at a baking supply store, they were labelled as cheesecake pans. Not sure if there is a William Sonoma in Australia but I know they had a set of 4 in there. Price was around $30 Canadian, a bit higher than the $3.99 that I paid for mine but not too bad.

Share a pic if you do make them, Id love to see how everyone's pies turn out ;-)

Hi,
I found the 100 mm spring form pans at K Mart, 2 for $ 11.00. I would prefer to have the sides a bit higher but beggars can't be choosy.
We are going shopping today so I will by 4 of them. May be I will make some stainless inserts to raise the sides to 2" or so.

All this time and I never realized that my recipe didn't include the number of eggs! I have modified it here but can't seem to edit the original post. The pastry uses 2 eggs. Sorry about that folks!
