I purchased a leg of NZ lamb from Tesco 0n offer at £5.50per kilo and boned it.
now merely fat

crap pushed the wrong key.Anyway the point was a weight loss of just under 25% from 2004 gms to 1568 gms.

So that's £11 for 1568gm of leg of lamb.

3½lb of leg of lamb at just over £3/lb seems a pretty good price to me.

It is being turned into lamb burgers today.Its a kind of watch the fat move.Very lean.
Ill freeze some for stews.I posted more as a point of interest I at least am always pondering on how much bone in whatever.
Its in Tesco.

I scored some lamb shoulder yesterday, about 5lbs of 20-30% fatty meat in the end for about $14 Canadian! I was gonna go back and buy more today but alas the sale had ended.

I'm in the process of prepping everything to make merguez sausages but was planning on putting some aside for burgers. Kneaded some dough that I've now got proofing for the buns, but I need a burger recipe for the patty. Suggestions guys?

Thus far I have the homemade buns, a homemade harissa mayo, and a good amount of goat's cheese and caramalized onions to go on the burger, just not sure what should go in. With beef I usually keep it very simple, a little smoked paprika, some ground bacon and beef mix, and s&p before grilling but I think the lamb will require a little more to it. Correct me if I'm wrong, never done homemade lamb burgers before.

I used 1gm each rosemary and mint 0.8gms black pepper and nutmeg oh. and 6 gms salt per kilo.
Its OK.
